Have you tried looking at UK comparison sites like www.skyscanner.net and seeing if they can get a good deal?

Just a thought, but could you not pay in cash whislt in the States? I've never tried but seems like a logical, but probably not without pitfalls, solution.

Won't you have issues getting let in to the country without a return ticket?

Yes, to use the visa waiver programme you need to have a ticket out of the country on entry. I think they can see the ticket details on their screens, and a couple of times they have asked to see my itinerary/e-ticket.

You can always book a flexible ticket on the way out, more expensive but you can move +/- a couple of days with no charge.

If you book multi trip you can book into JFK/LGA etc and then out from LAS for the return.

US is a mare at the moment travel wise so would make sure that your ESTA is bang on but maybe you'll be ok in March.
