How will he lose the oil?
The system will sense no pressure in the pipes (due to there being no gas!) and the low pressure switch will not engage the power to the compressor clutch. Therefore the pulley should just spin without turning the compressor. I'd ensure the pipes are plugged though as I cant say its something Ive ever done..

Not a problem. Just pull off the spade connector feeding the compressor clutch. The connection is right near the flywheel. Yes and seal off the pipes with insulation tape as if you get moisture in the open pipes then the system will be buggered up when you next need it.Much better to run the car with the a/c condenser fitted though. They are not that expensive new either.

i know they are not expensive i just cant wait, i wanna start fitting everything in 
The air-con system is NOT part of the engine, it's just powered by the engine.
There is no problem running it without the condenser.
As said already leave the air-con OFF and you'll be fine.
Oh, and FWIW, it's dirt and / or the moisture in the air that caused the biggest problems.
Both can cause the system to block up when it's running.
The dirt can obviously physically block the smallest point in the system and the moisture can actually freeze inside the system and block the gas from circulating.
When you put it all back together make sure to get the air-con system sorted by a refrigeration specialist.
Don't try the cheap route and get one of the DIY things form Halfords, etc as proper vacuuming of the system is essential and the DIY kits won't do that for you.
