well it might just be a coincidence that its insane flicking from empty to full (rapidly, accompanied by clicking noise..) roughly coincides with my engine removal/replacement recently....but does anyone have any tips on where I should start looking for the cause of this latest interesting yet very annoying fault?

Sounds like an intermittent loose connection or short somewhere. Behind the dash or down at the tank sender. Possibly a poor earth of you've disturbed the battery cables.
