Correct Oil for my car, and brake fluid swap

What's the best oil for the 2.9 V6 Cologne engine? I've been told Valvolen (or valvoline?) is good, but what grade do I need?

Also, is it a big job to swap my brake fluid? I'm looking at Dot 5.1.

Can't help with the oil, but when I changed the brake hoses on my Chim to SS I took the opportunity to thoroughly bleed the system. I obviously didn't get ALL the old stuff out but I was pretty thorough and IIRC used around 1 Litre of Dot 5.1

Ultimately you have a reasonably low stressed but oldish engine. So I wouldnt worry about sooper dooper Mobil 1 'technology' etc - a good quality semi-synthetic, on the thicker side...? There is a lot of emperors new clothing spoken re oil though.
