Is there a way of over-riding the auto tilt on the wing mirror when you stick the car in reverse?

Yep - click the left/right mirror direction slider switch across, that should stop it.

I have mine set to tilt 99% of the time, but there are occasions where it is easier to have them facing straight backwards.
