I have 3 wireless access points at various places throught the house, all hard wired to an ethernet switch. I need 3 to give me full coverage throughout the house.

1. With just basic kit (netgear AP's x 2 + 1 x BT home hub)am I correct in thinking they should all have the same SSID and WPA passwords set but each be on a different channel ?

2. If I move out of range of one unit will my laptop roam over to the next unit that is now in range ?

Very simply, yes. Same SSID and WPA key but all on different channels.

Laptop should roam between access points automatically depending on signal strength.

Use channels 1, 6 and 11 to avoid overlapping.

Agree 100% with the above. I have the same setup here at home. Works great. Normally the default "roaming agressiveness" is fine for the client PC, but you can tweak it to get the best hand-off performance.
