Cod loin, rooster red potatoes, home-made beer batter and pickled onions. A rare treat but worth the calories and the oily smell in the kitchen.

Oh, the 'bits' or 'scraps' were the finishing touch.

I steamed the chips first which prevents the flesh from becoming water-logged. They were then dried in the fridge for three hours and deep fried until crisp and golden.

That looks great!

My only comment would be that the pickled onions look a bit anaemic - I like Garner's, or home-made with lots of chillies in.

You know, I've tried lots of varieties and you can't beat balsamic shallots from Aldi. These however, are Sainsbury's silver skins which taste better than they look.

I shall be doing my own at some point.

biggrin They are almost as good as my cousin's home made ones wink I'm having to make do with shop bought as he is working atm and doesn't have time to make them, and won't give me the recipe the big meanie!!! So I've been sampling all I can biggrin

Fantastic meal. Nice thick piece of cod as well, excellent work.

Interesting point about the steaming, I tried it once after reading it on here, and got no better than boiling the potatoes .. perhaps I did it wrong. Also, I wonder if older oil that may absorb water over time does not help?

For the oily smell, then get yourself the shed

Sure: 125g all purpose flour, tsp baking powder, tsp salt and pepper, tsp sugar (for colour) and enough lager or beer to make the correct consistency. The fish in the picture was cooked a couple of hours after the batter had been prepared and seemed to benefit from the resting.

A bit like a Full English Breakfast, smells good, looks good.

I did that the other day too, (but has mushies too!) and all was good, except the batter stuck to the basket in the deep fat fryer! It was like st to a blanket!!
