Can anyone point me in the direction of a decent chinese vegetable curry (or other vegetable dish in sauce)?

I'm going to do a whole steamed sea bass with a thin sweet ginger/soy/rice wine sauce (with steamed rice), but there is one vegetarian in attendance, and I think everyone else could do with a veggie compliment to the fish.

Spring rolls are easy to make from scratch too. Lightly poach the veg in a mixture of rice wine vinegar & sugar until just on the point. (I'd use things like carrots, beansprouts, rice noodles etc)

Get your round rice pancake things and place in a dish of warm water until pliable.

Spoon the mixture into the pancakes, tuck the ends in and roll up.

Deep fry/Shallow fry.

Serve with oyster sauce as a dip (hehe)

How strict? Well, oysters would be an absolute no-no, but I could easily get away with telling her that oyster sauce is made from oyster mushrooms wink

I like the idea of Stacy's cabbage and mushroom dishes as sides to the fish, but I'm not sure how well they stand up alone...thoughts?

'insert choice of veggies' in black bean sauce?

Veggie chow mein - handy side dish?


Liking the sound of the spring rolls too - just offer a thai type dipping sauce rather than the Oyster sauce if that 'offends'.



I love chinese but thanks to the Mrs and kids I am also reduced to picking only from the vege selection mad

Cheers Stacy - I think I'll do that Tofu one as a primary dish for the veggie, and do the chinese greens dish you suggested before as a side for the fish-eaters.

i often do a few really, really easy Chinese sides:

stir fry iceberg lettuce leaves for about 20 seconds, throwing in a sauce of:

1 Tsp soy
1/2 Tsp sesame oil
1 Tsp black vinegar
pinch of salt and sugar

I also do a cucumber salad:

Take one cucumber. Chop into matchsticks, salt and leave for 20 minutes to draw out some of the water. Rinse and dry with paper towel.

Put the cucumber in a serving bowl and heat your wok. Dry-fry some peanuts (skin on kind, unsalted) and mix with the cold cucumber.

dress with chili oil, sesame oil, black vinegar and a generous pinch ground of Szechuan pepper.

people also really like Dry Fried Green Beans (haricots verts):

First, make sure your green beans are washed, topped, and DRY - this is so they dont spatter oil everywhere.

Get 2 TB of oil smoking hot in the wok. Add two handfulls of beans and fry for a few minutes until the skin is blistered and they are slightly wilted. Drain on kitchen towel.

Pour off oil until about 1 Tb remains, and turn the heat to medium. Fry:

2 cloves garlic
1 Tsp ginger
5 dried chillies

for one minute until fragrant. careful not to burn the garlic.

return the beans to the wok and stir.

immediately add in:

1 Tsp chilli bean sauce
1/4 Tsp sesame oil
generous pinch of sugar
small pinch of salt

and toss for a few seconds until thoroughly mixed. Serve.
