Profiteroles. The Dessert of Gods...

Tomorrow, I'm going to venture into unknown territory and make a dessert that isn't Eton Mess.
As I LOVE profiteroles, it seems an automatic choice. I'll be following this recipe:

Does anyone have any hints/tips that will lead to having properly edible profiteroles and not a lump of soggy pastry? Or even a better recipe, although searching online they all seem very similar.
My main concern is firstly, does I use the fan or normal oven? As I don't want the outside cooked and the inside not...
