Been reading up a lot on using decat pipes with a Tubi exhaust. I really don't want to have to put the cat back in every year for the sake of the MOT, and then take it out again...

... is this really what everyone with decat does? Is there any decat friendly MOT places?

I don't have a Ferarri, but my car does have a decat. On my car it fits with a flange either end, with two bolts in each flange. I actaully do re-fit the cat for the mot as it only takes me 45min to remove and 45min to refit using my jack and axle stands. If you prefer not to spanner your own car then there are places which can remove/refit before/after the MOT for you.

Alternativly there are 'decat friendly' MOT stations, but you may find people unwilling to post about them on the forum. Additionally, there are places where you can get an MOT without the car ever leaving home... if you see what I mean. These do cost more (and it's obviously illegal) but there are places where it can be done.

Better to find a freindly MOT tester, it takes a few hours to replace the cats as all the back of the car has to come off. Saying that mine almost past without cats.
Make sure you get the Tubi GTR system.

A friend of a friend of a friend ..... had a recent MOT and the exhaust analyser didn't go anywhere near the car. I thought they were all logged but apparently not.

What's the cost of the Tubi GTR system for a Gallardo?

Tubi GTR is ~ £2000 + VAT, not sure if that includes fitting or not.

Decat pipes are around ~ £400-600
