Personally, I think its a very tough call these days
There was a time the Friday was a LOT quiter so it was worthwhile making that the day (IF you could only go for 1 day!) so you got easier access to the paddocks etc
That seems to be less and less the case and the number of people that attend between Friday and Saturday don't seem to differ that much (or at least it feels that way)
Possibly comes down to things like -
a) what drivers are around on a given day
b) what air displays are on a given day
(if you're bothered by that)
Sunday is definitely the busiest, but as said, every day is manic anyway!

Stay late, whichever day you go. Last year I was there on the Friday and rather than head for the inevitable rush hour traffic, we wandered around the paddock until at least 7:30pm. It was empty and all the cars are back for spannering at that time. Watched transfixed as a couple of angry Frenchmen (one with requisite cigarette) removed a supercharger from a Bugatti using a rubber mallet...

, this. Whatever day you go (any day you'll be blown away!) get in at 7 and leave when they ask you to get out My Dad and me are giving Le Mans a break this year and will be attending on the Sunday. Looking at the ticket options in the Goodwood site there seems to be loads more ticket choices for Revival than FOS. Is this because the Levant options have all sold out or is the seating different?
