I realise that this question might open myself up to some ridicule and general moaning about poor standards of English but here goes.

If you were to write:

Our site and schools' brochure....etc etc

Where does the apostrophe go within schools? There are many schools but only one type of brochure, on the other hand there will obviously be more than one copy of that brochure.

Thanks in advance.

It's in the right place - if there are multiple schools then it goes after the s. A single school would have it between the l and the s.

I have to teach this to marines and matelots on a regular basis.....

I did try a quick google search for clarification but it came up in similar sentences with school's and schools' or just schools for the really lazy!

What is the relationship between the schools and the brochure, i.e., is it a brochure advertising the school(s) or is it a brochure for site[s] and schools?

If the former, I would say you need an apostrophe; if the latter, I would say that you do not.

If you do need an apostrophe, the number of schools will dictate the placement of the apostrophe: if one school, it would be school's and if more than one, schools'.

If it's hard to figure out then the sensible course of action is to re-write the sentence.

Our brochure for etc.....
