Moving to iMac which PC software should I replace.

Replacing my desktop with an iMac for various reasons. However, not sure whether I should also abandon MS Office, Photoshop, Premier, etc in favour of Mac specific software.

Depends on how you use your computer really. The Mac will come with iLife installed which includes a suite of programs that cater for many users needs. The apps are iPhoto, iMovie, iWeb, Garage Band & iDVD. Have a look here for some clues as to the extent of what they can do: http://www.apple.com/ilife/tutorials/#iphoto-intro
If you are a heavy user of Photoshop, iPhoto won't cut it but it's great for doing the usual tweaking of images.
iWork is a paid for package of applications that is Apple's alternative to Office, and for me, more than meets my needs. It comprises three apps - Pages, Numbers & Keynote. Have a look here for some more info: http://www.apple.com/iwork/tutorials/?sr=app#pages
Pages is not only good for word processing but it has some pretty good page layout capabilities. With the iWork programs you can open Word, PowerPoint & Excel files (with some limitations), and you can also save your files in MSOffice format if you need to share your documents with Office users.

If you don't get on with iLife for whatever reason, just get MS Office. It's available on the Mac....

If you already have a licence for Office on the PC, see about transferring it to a Mac licence. Same goes for the Adobe products.

However, I find Office works faster in Windows 7 in Fusion than 'natively' on Snow Leopard.

Try Open Office - free, good, compatible with MS office formats. I would not pay for MS office with my own money.

Try GIMP for image manipulation.
