Someone from my work is selling one, standard 1998 model estate. High miles but fsh and seems to be in good nick.
I seem to recall that these are something like 1250kg dry. How much could feasibly be saved by stripping interior trim, rear seats etc? How suitable are they as budget track-slags?

I had a 1998 turbo saloon - first decent car I owned and I absolutely loved it 
Did a track day with it and tbh it was marginally underwhelming - quick enough but not much fun, lots of understeer (although I am happy to accept that may have been down to me
). Maybe RWD would be a better way forward for a track car ?
By the way it was 208bhp as far as I can recall...

Turbo 2000 had 208hp revised to 215 for 99 MY. The weight isn't far out if not correct nfast and capable. Should be reliable but can be Pricey if stuff breaks.
More of an understeerer in stock trim and rubbish brakes. Would be a laugh for sure and lots of potenial if you have the £££. But pos not the most fun.
Also what sort of money? £3k will get you a JDM Sti, which is quote different and better car.

I really love Impreza's and Subaru's in general, but a Turbo 2000 is a compromised setup IMO without BIG money to spend on it.
And then there's the important question on fun. A track day isn't a race, so do you want the fastest you can buy/build or do you want maximum fun?
For me I'd much rather have less speed, but more fun.
So I think I'd be looking at things more like these:

All are lighter than an Impreza, all RWD and more fun. The V8's will sound fab too. And I suspect all would be cheaper to run and maintain in terms of parts and upgrades.

I only came to that conclusion based on the budget that you have: if youre spending a further £2,000 over the cars purchase cost then Id have one eye on re-sale. Whether the GF8 has better weight distribution (sufficient to make any difference) than the GC8 I cant say, but it certainly has far less rigidity. If you want it to work as it is (with geo and a decent rear ant-roll bar) then Id say that a 'Wagon would be best, as theyre cheaper. If youre spending money then put a little of it towards a Saloon, as itll be money well spent.
