What do you all use for system documentation?

I ask as at some point I need to do this properly vs. an ad-hoc set of documents/notes.

I don't claim to be the most organized person out there so something like Onenote quite appeals as there doesn't seem to be much structure needed (as is often the case when you want to note something down on the fly).

I'm familiar with Sharepoint and Wiki's but they all seem to rely on a "start with a blank page with the cursor in the top right" whilst Onenote almost seems like shoving a pen and paper in front of you - but I don't know how well it scales/how easily it can be shared out etc.

I've tried all sorts over the years. Whilst I would love to have a tidy set of up to date docs, the simple reality is that it never happens.

I've tried Wikis and blogs and paper and none of them worked very well.

However, I'm finding OneNote very useful though having used it for a couple of months. It's still a bit hap hazard, but I've recorded more useful stuff in there than I have in my previous multitude of formats.

Yes I've had a few tries and they've all started with "good intentions" but at some point I find myself sat there in front of a blank Word document thinking "this format really is st when I just want to scribble ad-hoc on the page".

I have no idea how (if?!) Onenote scales though - plus I guess there's always that nagging feeling that it's a proprietary format rather than html/xml/txt files.
