What exactly do you want to do?

Outlook will use a "profile" to connect to Exchange and you can simply setup additional profiles and choose which to use when you start Outlook - but this may not be what you want.

I'm using Outlook both to connect to exchange offsite (via OWA) and for my personal emails (via gmail pop3).
Sometimes I don't need to get my exchange emails and other times e.g. this weekend the server is having maintenance done and I will be unable to use it. If I can turn it off then it won't spend all weekend complaining about being "unable to connect to microsoft exchange" and for some reason when that is the case it stops me sending my gmail emails.
I hope that helps/makes sense!

Use two profiles, work and personal - Control Pane/Mail/Show Profiles and you should see a single profile - you need to add a second one.

Or just don't 'include this account in send/receive' temporarily
