Chicken Kebab Recipe Needed

Try this as a marinade for any kind of chicken - it gives a smoky/spicy/savoury flavour that you can't quite put your finger on:
(for 1Kg of meat)
200ml extra virgin olive oil
1 heaped tablespoon smoked paprika
1 heaped dessertspoon finely chopped rosemary
1 small onion, grated
1 teaspoon salt
Mix together the above and marinate the meat for at least 6 hours. Wipe off the excess marinade and grill or barbecue.

Olive oil, salt, pepper, finely chopped garlic, finely chopped onions, fresh lemon juice, freshly chopped chillis and parsley. Throw it all in a bowl with some natural yoghurt, mix, throw the meat in and leave for as long as possible in the fridge. Use of tikka powder/paprika/turmeric/chilli powder/chicken seasoning/garam masala with initial ingredients to colour/flavour as prefered.

Whilst working in Dubai last year every day on the way home from work I would stop at the we man selling chicken kebabs they were the most amazing flavour. I could not get enough of them. Finally asked him what was in the marinade? Through the language barrier I came home and tried what I could remember he said was in the mix.
What I do is (every time the quantities differ)
Chicken, olive oil, garlic, hummus, lemon juice + the rind, yogurt, chilli powder and I like paprika for taste and colour.
I have never done it on the barbi normally just stick it in the oven but the barbi would be great.
Prick the chicken breasts with a fork mix in the marinade and stick it in the fridge for as long as you can, overnight is best. then cook as you like serve in some nice pieta bread with some salad + I mix the left over hummus & yogurt with some garlic to drizzle over the pita bread and salad.
Takes me back to Dubai every time I have it.

If you are going for a sticky sweet marinade use some cornflour to thicken the marinade..just remember that sugary msarinades burn quickly on the bbq and get bitter so wipe off the marinade before hitting the bbq and brush them on in the last m inutes of cooking.
Here is a recipe i use for Chicken Wings which would work just as well for breast meat.
15 Chicken wings
3 lemon grass stalks,finely chopped
4 tbsp oyster sauce
4 tbsp chilli sauce
2 tsp honey
Place the chicken wings in a bowl with the lemon grass.cover with cling film and leave to mrinade for about 3 hours.
whisk the oyster and chilli sauce together with tablespoons of water and the honey,set to one side.
preheat bbq.
score the wings with a knife,place on bbq and cook for 5 mins each side until cooked.
brush with some of the oyster sauce mixture and give them a quick sizzle back on the bbq.
serve with a drizzle of the remaining oyster sauce.
