I also quite like smoked salmon with a salty Islay, or amontillado sherry.

The classic port and stilton.

But you need to match it, no good having great port and st cheese.

You've got to have cooking stilton with cooking port and great port with great stilton.

Up here in Norway :

Pinnekjøtt (Salted smoked ribs) and Aquavit (Petrol)




What alcohol from the Aquavit hasn't evaporated by the time it hits your stomach is supposed to help break down the fatty salty meat. This is more a Christmas thing, but worth looking forward too.

Flinty, minerally pouilly-fume and quick-fried seafood (crayfish, squid, scallops....anything really).

Spicy szechuan chinese food and ice cold beer.

A "timeout" with a cup of tea.

No other biscuit comes close and the timeout, on it's own, is too dry.

As we speak, I am tucking into Cheddar cheese on toast, drenched in Lea & Perrins, followed by a strong cup of PG char, sans sucre.
