The volume switch has departed from my iPhone and I've got a new one being delivered Tuesday so a quick question?

How do I format the old one and remove emails etc?

Your needing to restore the iPhone back to original. Link it up to Itunes and restore it. Simple as that.

I assume any apps etc in my iTunes will still be there for my new phone once I restore my old one and once I hook up the new one it will all sync across?

On the phone: settings > general > reset> erase all content and settings

make sure you've got it backed up if you're intending to restore the content to the new phone. Most stuff will sync to the new phone, I had to re-download some apps, but otherwise it was fine.
