I needed to free up some freezer space last night, so I ended up cooking some frozen Cumberland sausages I had in there. Now they are in the fridge and I don't know what to do with them... I could make sausage sarnies, but that's a bit boring. Anyone got any ideas for recipes involving cooked sausages?

Sausage with pasta?
Sausage with roasted veg (a la Cotty)?
Sausage omelette?

I'd probably go for the latter.

Squeeze out the sausage meat and fry it. Bash it as it cooks to break it up into little bite-sized pieces.
Add some chopped chillies, a splash of white wine, butter and lemon juice.
Add some sliced/diced mushrooms, a little oregano.
Mix in with some pasta and serve with a sprinkle of parsley.

you could use the sausages (grilled) along with a fried egg or 2, a couple of rashers of bacon, mushrooms, toast and some baked beans.

it sounds an odd combination i know but is an interesting dish i thought up all by myself. lovely.

Wait till breakfast tomorrow.

Can of beans, slice sausages in whilst cooking.
Fried eggs.

Serve on toast or in a bowl with gallons of tea.

Quite a few excellent suggestions there! Thanks guys/gals.

I think I'll go with a few of them - as there are 12 sausages, I'm not going to run out! So tonight I'll do a yorkshire/toad in the hole type thing, and tomorrow morning I'll do some in a breakfast with egg & bacon. Then in the evening some kind of sausagey pasta dish.

Probably won't ever want to see another sausage after tomorrow night!

Fry your sausages in a big pan. Break them up into 1-2" bits.

Take them out and fry a roughly chopped onion and a few bashed up garlic cloves in the sausagey oil. Add a tin or two of tomatoes, a glass of white wine, a couple of finely chopped chillis, a spoon of sugar, some chick peas, some kidney beans and some cannelinni beans. Good dose of coarsely ground black pepper.

Let it cook for a bit and put your sausages back in. Give it a bit longer and serve with big hunks of crusty bread.

Now, THIS belongs in the food that makes you guff thread.

Slice them really thinly and then fry them in garlic butter for a few mins. Then take them out and pat them dry and then pepper them with either paprika or dry mustard. Then fry them again until they are really crisp and have them as a snack. They should keep quite a while wrapped air tight.
