Madrid - must do, must see, must eat? Suggestions please?

Will be in Madrid for a long weekend in 2 weeks time. Can anybody suggest good restaurants, bars and things to do?

Restaurant wise, I always liked El Schotis in Cava Baja. Just bear in mind that most restaurants won't open till at least 9pm. Bars change all the time, so there isn't any point in me recommending one. Typical regional cooking includes the following. Forgive me for the cut and paste job, but you'll get these dishes in many of the restuarants. I like Cocido Madrileño (my wife cooks that at home) and if you are brave, try Callos.
