I am specifically interested in how the car industry gets from the CAD office to full scale production ; component endurance testing etc.

Not thinking of starting up a new car brand, just looking for ideas to reapply....

A car is nothing more than a product, the same as a TV, kettle, fridge or Jumbo Jet.

A single book that would capture all aspects of concept, design, development, tooling, manufacturing methods, production philosophy, supply chain, qualification, testing, and development (to name a few), would be several feet thick.

Specialise! There are plenty of resources to call on if you primarily want to concerntrate on the design process, and the CADCAM sides of things.

A car is a massively complex assembly of materials and components. Start simple with a product that is relatively simple in its assembly chain, e.g. a near net shaped moulded / pressed product like a nut / bolt / CV gaitor, and then assemblies from then onwards.

Beware when googling for websites relating to design and manufacturing. 99% of the top searches will be people selling packages, and blood sucking consultants dressing up other people ideas with their own tinsel and charging £1000 a day for the priviledge.
