I seem to remember that if you are forwarding a letter on to someone where it had been sent to the correct person but at the wrong address (a previous occupant of my house in this case) you don't need to add a new stamp? I'm sure that in the past I've just crossed out the address, written the correct one on the envelope and shoved it back in the postbox. Can anyone confirm if this is still the case, and it won't cost the recipient any extra?

That's correct in my experience.

Yep, that's what I've always done. As long as the letters haven't been opened by you it shouldn't cost them anything.
