ford fiesta 1.4 1998 r reg, problems

please help,
ford fiesta 1998, 1.4 si, R reg.
temp gauge up and down like a yo yo,
cab heater, set to cold, blowers off, within 5 min car is like an oven, both pipes in engine bay leading to cab red hot.
drive at 60/70 on motorway, temp fine, occasional climb.
climb a long hill at 60/70 temp climbs to the red.
no loss of fluid.
been told possible
1. heater matrix
2. water pump
3. heater valve
4. rad is nackard
please help from a total mechanical virgin.
