I have resisted from posting loads of build threads that you have all seen over over, but I was interested in what you all thought of the carbon fibre cockpit?

LOL! No, the reason that I went for carbon was that the aluminium will scratch very easily as it is soft, proper pressure and heat cured carbon will not. It is very hard wearing.
where did you buy the sheets? How did you alter them to make them fit? Can you just cut them and glue them to the aluminium or is there some sort of trick to it?
You can buy 0.3mm proper carbon fibre (pressure/heat cured) sheet. It is incredibly tough, yet you can cut it size with shears. This is what I used for the floor to stop scuffing. The sides are 3M fake 'carbon' but are self adhesive and pretty easy to use.
