We always use the Maldron Hotel in St John Rogersons Quay, Cardiff lane.

Before being Maldron, it was the Quality Inn / Hotel.
It is close enough to town (about a 10 minute walk down the Liffey) and is opposite the new coke can building. Every time we go, more and more new buildings are being built in the area
The hotel itself is reasonably priced and has a really nice swimming pool / fitness center with jacuzzi / sauna and steam room etc.
It also has a pretty good breakfast and and OK bar area for that last pint of Guinness before bedtime.
I think we have stayed there 3 or 4 times and it has always worked out well for us.
