The road to Whistler is not bad, and if you're of a mind to, carry on up to Lillooet (500 or so km's round trip). I was there for a while earlier in the year, and did just that on a rare day off. The road gets deathly quiet once you get past Pemberton, and there are some great views too if you like that sort of thing.
Depends of course if you want to be out driving the Mustang.

Beautiful part of the world, you're a lucky chap.
I'd also recommend the Sea to Sky Highway. But if you want a 3 day road trip, I'd suggest carrying on past Whistler. Then head east towards Kamloops but before you get that far turn South towards Hope (the town where First Blood was filmed to give you an idea of the scenery). From Hope it's then Route 1 back to Vancouver. Takes you past the ocean, mountains, forests, rivers, and arid almost desert like country. Should make for a great drive.
ETA: Or you could jump on the ferry and spend 3 days seeing Vancouver Island.

Sounds like a good way to get to know the 'stang, just try not to bin it
Forgive me, but it sounds like you've never driven one.Sounds like a good way to get to know the 'stang, just try not to bin it

With an asthmatic old 4L v6 making just about 200bhp (and being very reluctant to rev) while only coming in slushmatic auto form with intergalactic gearing, while weighing the same as a small moon, the rental 'stang isn't a fast car.
In mine, I seem to remember it did 50mph in 1st, 80mph in 2nd. That's what I mean when I say intergalactic gearing. Bear in mind, the engine isn't all that man for the job - performance is at best warm.
There's a new one coming with a much more healthy amount of power from a smaller v6 (300bhp from 3.7 or something?) but I've not seen a single one of those as a rental yet.
Incidentally, the hire car companies I use in the US (eg. Hertz) routinely check tyre tread depths and will charge you for tyre damage (eg car goes out with 6mm of tread, comes back 400 miles later with 3mm - you're paying for new tyres.)
Hooning wouldn't be free.

ETA:
When I go stateside it's usually for a while. Last time I had a Mustang it was for 6 weeks, which is why I know a little about them.. I was even bored enough to set up the interior disco lights the way I wanted. Sad, or what...
