You can go a bit wider on the rear, up to 255/35. Best sizes for the front are 235/40, 240/40 or 255/35. The front end is very sensitive to changes in tyre rolling radius and it can make the car very twitchy if wrong (eg with 225/35's that some people have fitted).

225/40/18 gives you a radius of 200.18 cm's (height 63.72 cm's)
255/35/18 gives you a radius of 199.71 cm's (height 63.57 cm's)
therefore the best set-up
235/40/18(height 202.70 cm's) makes the frontend higher than the back-end
you need to kep the frontend down for more driveability

To add a tyre to the list: Vredestein Ultrac Sessanta. With those my car feels much more planted and they got rid almost entirely of tramlining, which before was a serious issue on motorways.
Then again, I don't think there's a single best tyre, as preferences vary hugely. The same goes for tyre pressure. Different people use their cars in completely different ways, on different types of road. Also, there are big differences between various Tuscans (Mk1, Mk2, Convertible) and that's even before any changes have been made to the car by the owner!
