Short break ideas - mid August

Hi guys
Hoping to get away in mid August probably for 3 nights/4 days and after some ideas
Budget probably £500-£600 max for two people, less would be better of course! Open to flying or driving somewhere but not too far as don't want to spend half the time in a car/on a plane. Travelling from just west of London. Type of holiday, quiet and relaxing rather than hectic, would be nice to have the option to do things but don't want the pressure of going to a typical tourist destination and have to rattle around a million sites with cameras poking me in the ear. Have had the following thoughts:
1. Cottage somewhere in the UK, but am thinking the places I would really like to go to like Highlands or parts of Wales will take too much time to drive to for the time actually spent there, eating into holiday time.
2. City break in Europe somewhere, thought about Paris, Barcelona but already been to both and would like to try something new. Thought about Croatia possibly or Bruges? Vienna? Both supposed to be nice but don't know much about either or whether its feasible for such a short holiday. Would rather have an apartment than a hotel.
So the floor is open, welcome any thoughts, suggestions from personal experience, recommendations of cottages/apartments etc.
