What to cook for hot date at her house.

I have a date on Saturday evening with a new girl, I am going to be cooking a meal for her at her house.
I am after some suggestions from the PH Foodies, I have had great success in the past using PH techniques to make food, like Aged Fillet steak with Brandy and cream sauce, and I tried the one pan sticky chicken yesterday to great success.
My criteria are :
Has to be relatively easy to cook. I don't want to f
k it up and look like a numpty. For this reason somthing like a souffle is right out.
Has to relatively quick ( I love slow roasting..mmm slow roasted belly of pork...but I don't have the time ) say 1 hour max.
Must not create a huge mess in her house, anything that requires lots and lots of pans, flour everywhere etc. - as a caveat, I can do some pre-prep if needed, like marinating or creating sauces, or battering.
Just to make like easy for me, the wonderful lady in question is slightly intolerant to wheat and dairy. Something battered like tempura prawns is okay, but a ploughmans for example is right out.
Also if you have a wine suggestion to go with the food I would be greatful, the lady in question likes all kinds of wine so I have free choice.
Please help me make this night special for her.

This looks very good..........however I don't think I have the confidence to cook it right first time. I have had very variable results with risotto....I find you have to have very good control of tempretures and timings and quantities not to end with with a gloopy mess, and the only way to really perfect that is practice. Incase your mind's on other matters, just test the spuds to check they're done with a knife before serving as that's the only thing that could go wrong - you can always give it a little longer in the oven without harming the salmon much if they need it; personally I like to par-boil them a little longer than the recipe suggests...
Asparagus sounds like a nice variation but dougc hit the nail on the head - I'd just stick with the beans, they taste great steamed!

Bottle of champagne (leg opener) to have together while you cook. Bring some olives to have with it.
Roast some cod loins (butter, salt and pepper on top, chuck under the grill)
Warm salad of pan fried garlic, pancetta, broad beans and either red cabbage or kale
Boiled then crushed new potato
Nice bottle of white and away you go.
Nothing very fancy but tasty if you use good ingredients.

Stop it now, word might get around...

Slap a dominoes pizza (pepperoni) down on her table. If she decides she a veggie get in and out quickly. If she eats it then leave. If she asks you of your serious, bang her then do her some scrambled eggs after.

Or thinking about it tell her your doing something elaborate so need the house to yourself for an couple of hours, set up a wireless webcam in bedroom, set up website charging a reasonable £4.99 via paypal for access then repeat the above.
