Strange Water Temperature Readings

After using the car for about 20 mins i seem to be getting some strange water temperature readings on the Pod. It can suddenly shoot up to 199 then go back down to 85 in seconds. Ive changed both the water temp sensors on the car, the ECU and Pod one, Checked all earths, fuses and relays. The car is obviously not running at these temps and both fans appear to kick in as they should, drivers side first, passenger side second. Have also checked for airlocks and water levels, all ok. Im guessing now its either a dodgy connection/wire from the loom or the pod needs a repair. Any help/advise would be great.

Hey mine does exactly the same. If I turn off the engine when it's doing strange things it seems to return to normal when restarted. I found some corrosion on the sensor connector but even after cleaning it still does it occasionally.
It freaks me out when it goes to 199°C but it's not really that hot.

Just to update,
These erratic readings finally escalated into failure to start and a code J dignostic reading, but it turned out to be degradation of the engine to chassis earth. It checks out OK with a multimeter but when under load it breaks down, giving erratic readings on the pod for temp and oil pressure or at worst lazy cranking or no start whatsoever. Putting another earth in fixed the problem.
