Checked in online, and only taking hand luggage. I assume that '2 hours before check in' doesn't apply and we can just rock up say an hour before the flight takes off?

Generally speaking, yes. If you've got your boarding pass printed out or on your phone then the only queue you'll probably need to get in is the security one going airside.

If you are travelling to certain destinations or on certain airlines however, there may be additional security checks even if you are just carrying hand luggage.

Depends on where you're going, long or short haul?

To be honest I'd turn up as requested and enjoy an hour relaxing after clearing security. If you find yourself there at the same time as 'certain' flights you can be queueing for quite a while.
