Hi I have been asked a question I do not know the answer to so hoping somebody will " why would a pilot not use a 16 point compass to fly 1000 miles to another airport "

Because it is nowhere near accurate enough for navigation over that kind of distance.

Edit - to clarify, a 16 point compass is marked only every 22.5 degrees. An error of 1 degree heading will result in a positional error of about 1 mile, for every 60 miles travelled.

He'd be far better off using an aircraft of some sort.
