Any Subaru motor is a good fit. Have a look in the alternative engines section of www.volkszone.com for advice.
For non-turbos a 2 litre might be a little down on power for the spend involved (BHP per £ spent) so I'd say look for a 2.2 or 2.5. If you want turbo then its aa case of how deep are your pockets. The easiest way to approach it is to buy a complete working Subaru Legacy and the conversion kit.
Of course other stuff goes in: 4/5 pot VAG, V6 Ford or even those nasty oil burning 1.9 VAG engines.

Thought about this when my last engine blow, a '87 water-cooled 2.1, wanted at the time to go down the Subaru 2.2 root. Good solid engine. Used in light aircraft (i.e. = reliable).
Ended up with a dutch rebuilt engine, due to the added cost of upgrading the LPG system
With hindsight I'd have ditched the LPG and gone with the Subaru engine. ( LPG is a pain in the backside TBH, but that's another story ... )
With bit of extra hindsite, I'd fit a tuned 1.9 PD TDI (200bhp~300ft/lbs-ish). That would shift a T25 quite effectively, and not cost a fortune in go-go juice.
Another nice engine is the 1.8 20v Turbo (200bhp~250ft/lbs-ish). Would be fun too.
Gearbox, driveshafts, suspension, fuel system and cooling system would need an upgrade too.
