I have made a Lancashire Cheese and Apple cake for the first time. A moist cake but very nice.

Recipe;
15g Butter
200g Self raising flour
1 heaped tsp baking powder
75g golden castor sugar
725g dessert apples peeled and cored
125g stoned raisins
1tsp grated nutmeg
2eggs - beaten
110ml sunflower oil
150g Lancashire cheese - crumbled

Generously butter a 9inch loose based cake tin. Preheat oven 170C/ 325F /Gas 3.
Sift flour and baking powder tog. add sugar, apples, raisins and nutmeg.
Beat eggs into oil and stir into mix.
Spoon half into tin. Add layer of cheese and top with remaining apple mix.
Bake for one hour until golden.Cool in tin for 30mins. Dust with icing sugar.
(I wizzed the apples in a processor.
As I have been given quite a lot of cooking apples may try it with them next time.

I've made a couple of different apple cakes recently having aquired a load of cooking apples, both turned out well, not heard of apple and cheese in acake before though. You reckon you'd need to make many changes to use cooking apples instead?

I would possibly give a longer cooking time as the cookers are be a lot firmer apple
