Hot Running. Help!

Having an issue with the Passat as of my drive home last night. Since I've had it, the temperature gauge sits at 90 degrees (centre of the gauge) when up to temperature quite happily. Last night, however, I noticed it creep above 90, albeit only slightly. It then returned to 90 (I assumed at this point it was the electric fan kicking in causing it to fall back.) It then crept up slightly further again.
It seems odd as it gets up to temperature (90) happily sits there for say 10 miles, and then creeps up. This morning on my way into Bath it reached a head. About 15 miles into my journey, it crept up, and then settled back down. On entering Bath, the temperature gauge crept up to half way between 90 (normal) and 130 (red zone of temp gauge) I.e., pretty bloody hot running.
The conditions were cold, we were not sat in traffic, and were happily pootling along.
I must point out at this point that the temperature sender is a little 'dodgy' Before I am flamed, it generally shows dead cold and then goes back up to temperature. This can happen a couple of times on a journey. Over the last few days, however, it has been showing a steady 90 (until this little incident).
Coolant and oil are pretty much up to level, electric fan works, viscous fan coupling is a little knackered but it's been this way since I bought the car. So, the only other thing I can think of is the plastic impeller on the waterpump has sheared off.
Gentleman I leave the floor open to your thoughts. Please forgive the essay. And yes, the first thing to do is to replace the temp. sender.

The waterpump has packed up, it's common on VWs (plastic impeller on a steel shaft). The reason the temp is going up then down is it is circulating by thermo syphon each time the thermostat opens, hense the quick drop on the guage.

Unfortunately, It's looking like headgasket failure, although it's not 'clear cut'.
Had this horrible gunk sitting a'top of the coolant of the header tank. No other associated symptons of HGF though (I.e. no white smoke, no loss of power/erratic running etc, no mayo in oil, although the oil level has significantly dipped).
I took the car in to the supplying garage, and we agreed to flush out the cooling system and change the thermostat, as the hot running had subsided (for now).
Picked the car up on tuesday, went on a date last night, and noticed that it was running hot again. Checked the coolant level the next morning, and low and behold it was low, as was the oil.
I'm taking the car back into the garage with a view to change the headgasket, but as the symptons are not clear cut, are there any other things it could be?

Yeah forgot to add a block test was done and came up positive. It would seem the car has the automotive equivalent of 'the bad aids'. The only reason I didn't mention the block test (apart from the fact I forgot) is that I was told that if it showed prescence of CO in the coolant, this was not the 'be all and end all'.
