Insuring 3 Cars Between 2 People

I'm looking to buy a 3rd car as a weekend toy, I currently have a car and my Wife has her own.
I was under the impression that one set of no claims could only be used for one car, therefore the new car would effectively be insured with no no claims as my BMW has my set of no claims on it and my Wifes car has hers.
We only really need one sensible car as we work together so I was going to get rid of hers taking us back down to 2 cars but She has started to kick up a fuss.
She mentioned something ridiculous like wanting to keep her car ... or something similar
Is a multi car policy my only avenue? There doesn't seem to be too many providers and the quotes I got seemed expensive.

Get the 'toy' insured as a cherished second car (sort of like a classic policy) try Peter Best. It might need to be garaged (depends what it is), will be limited mileage and you will need a 'first' car for everyday.
It's an Elise, it will be garaged and will do around 4000patry speaking to the Private Clients department in Adrian Flux. They do all our cars under one policy so they all start the same time to save paperwork - and money!
not exactly sure how it works, but I assume they put the NCB on the most expensive car, but then look at it favourably for the others too as they'd be insuring more cars. Pretty sensible given you can presumably only be driving one car at any one point.
