...Is Ghanaian S H I T O - shrimp and chilli paste.

I bought it on a whim whilst perusing the ethnic foods aisle of the local Asda, and was wondering if anyone has ever used it?

A bit of research à la Google presents some intriguing recipe ideas, some an interesting mix of French, Arabic and tribal influences. I think I'm going to use it as marinade for some boned chicken thighs, loosened with a little water and fresh sieved tomatoes. I'll then grill them on skewers and see how they turn out.

Will post the results here.

I lived in Ghana for a couple of years ( Dad was serving there in the RN) - all the locals seemed to eat was Fu-fu (sp?)with 'bits' added to it. I'm guessing that what you've bought is one of the 'bits'.

From what I've been looking at, Fufu is mashed plantain with yam or cassava... Seems to be the equivalent of South African Sadza (corn meal porridge).

On the subject of African food, try this:

http://www.congocookbook.com/vegetable_and_side_di...

It's a Kenyan vegetable dish. My parents were both born in Kenya and so she sometimes makes it. My mum usually puts in a bit of boiled cassava as well, which I think works well.

Lovely with some crusty buttered bread and a squeeze of lemon on top.
