Holiday recommendations over Christmas

After drastically underestimating the cost of a week in the Maldives over Christmas I was wondering if anyone can recommend somewhere nice for me and the girlfriend to go. Ideally looking for somewhere with hot, chilled out with maybe a few bits of interesting culture to take in and not hundreds of kids. Budget is around 2-2.5k which was fine last time we went to the Maldives, but seems to fall a bit short now (should have done my research earlier!)
