Healthy meal ideas with only a 3 ring hob

Morning all,
I seem to have made a slight mistake on selecting my new apartment - it doesn't have an oven :$
So, for the time being, I am stuck with a 3 ring gas hob on which to cook, so I can do my usual recipes for Spaghetti Bolognese, and fry off steaks and chicken in a griddle pan, along with boiled potatoes. As I'm turning into a lardy f
ker (too much beer and rice/noodles out here), does anyone have any reasonably healthy meals that I can cook on hobs only - I'm thinking of poaching fish with boiled vegetables, that kind of thing?
I probably cook at home 3-4 times a week at most, so I shouldn't get too bored of the same thing too quickly, as my meals out seem to include stingray, eels, shellfish, crab etc!

Given that I'm living in Sinagpore, if I want asian cuisine, I can go to a local food court and pay £2-4 for an evening meal which is a damn sight quicker/cheaper/tastier than I can cook it! I'm not looking for Dave200t

Tonight will be boiled spuds, pan fried chicken breast and salad as an example.

Go to courts, get a nice steamer and a convection microwave.
Go to Giant or NTUC and get a microwave rice cooker, some wild thai rice, salmon fillet tinfoil assorted herbs of your choice, Pack Choi, chili and oyster sauce.
One cup of rice in rice cooker, fill with water till one inch over the rice, slap in teh new microwave for 12 minutes.
Wrap salmon, herbs of choice and a little chili to taste in tinfoil with a splash of white wine (assumed you already have the vino)
Wrap Pack Choi, oyster sauce and some chili to taste in another tin foil wrapper.
Bung both into steamer for 5 minutes.
Serve up with rest of wine in a glass.
Convection microwave will mean you can oven cook stuff too, and the rice cooker saves a lot of hassle in washing up!!

Same hardware from Courts.
slice and lay some garlic onto chicken breasts, place in baking tray and wrap in tin foil (for posh touch, wrap in parma ham also) and bake for 15 minutes, remove tin foil and bake for 5 more.
Get some small spuds and corn on the cob, stick in steamer for 15 - 20 minutes till tender and serve with a nob of butter.

Yeah, I'm just starting a health kick, so am trying to replace stodgy pastas and rice with something a bit lighter after my evening run, but that still tastes nice. I'm just worried that a combination of lack of imagination and cooking skills will lead to me getting bored quickly.Is it that hard to poach fish - is it just a frying pan of milk, and insert the fish du jour for 20 minutes?
I'm not even sure if you can buy slow cookers out here!
