Transferring Cherished plate when buying car

If all goes well with a car buying trip tomorrow, I will have a new car that I want to transfer the plate from my existing car to, before selling the existing car. My question is can I go to the DVLA office with the log books for the new car and old and transfer the plate as I send the paperwork off to become the new owner?

Alternatively what is the quickest way to get the plate off my old one and onto the new one?
