Can I tax a car on a temp insurance policy?

The Missus and I are going to view a car for her. If we like it, we plan to drive it home.
Her insurance company closes at 5:30 and we are viewing the car at 6:30 so it isn't possible to change her current policy onto the car should we want to drive it home. The solution is to get a 24 hour temp policy and then call her real insurance company in the morning and change the details.
Problem is that the car isn't taxed. Yes, I know we shouldn't be driving it on the road but it's not like it isn't roadworthy and we will have insurance so it wont affect anyone else.
My question is whether the Post office would accept the temp insurance cover note to tax the car or would they turn her away? Her docs will take a few working days to come through and obviously, she will want to drive the car once it is home so would they accept it or not?
