Rolled belly pork - Organic, Free range - Cooking?

Hello all, I am planning to have the above for dinner with the family, we would like to be eating tonight at 7pm. Any cooking suggestions? Slow cooking? Good crackiling would be a bonus too .

last rolled belly I ate was cooked for 9 hours

Indeed. 4 hours minimum for belly. You can unroll it and cook it flat which would allow you to cook it in 3-4 hours, but the slower the better.

A tip from PHer 'Don' if your crackling isn't crackling, is to take it off and nuke it between two plates in the microwave.
