Apologies for the dull thread/post but I am sure that there is a clever trick to ripen the dreaded Avocado?

SOmething like stuff it ina brown bag with a banana or similar?

And is it just me but you have to buy 3 if you want to be sure of two good ones? (Greengrocers, not Waitrose)

I've heard of the "banana in a bag" trick but never tried it. I assume it works as I've known of it for years and heard it repeated several times.

Put them in a plastic bag - Ethene gas comes off the fruit and it ripens them. Bagging it up speeds up the process.

Yep. Ethene is one of the PGRs (plant growth regulators) and activates ripening/senescence.

Mind you a fruit ripened artificialy like this may well taste different from one ripened naturally on the tree.

Many plant functions reply on daylength to kick things off (thanks to phytochrome, another PGR). The longer the day, the more phytochrome is produced until it reached a critical amount which triggers various changes.

So even full sun can have no effect in November because the duration of exposure is too short for enough phytochrome to build up. Duration is more important than intensity.

Greengrocer told me years ago to wrap it in the brown bag, or preferably a newspaper, and pop it in the bottom of the oven for a few minutes at a time on lowish heat. It works too smile

Just stick it in the microwave for a few seconds, works a treat.......
