How about a one pot wonder? DO the night/evening before and then warm through on the day if you dont want to get up too early?Brisket of beef with the usual 'holy trinity', rosemary and thyme (Garlic optional) - good glug (Bottle best) of red with extra beef stock if required.
Slow cook once bubbling for pretty much 3/4 hours depending on size. For the last hour or so place some par boiled spuds in (tastes better on finishing if par boiled) and there you have it! A one pot wonder that is close to a roast but different....
Following day, warm through slowly and if needed, remove all the things bigger than a walnut and thicken slightly if required with a small butter/flour mix to preference; be sure and cook through the thickened sauce or wont cook out the flour.
Replace everything into the thickened sauce and serve from the one pot - carving the brisket at the table!
Bowl of green veg to go with and next to no time in the kitchen on the day....

That gets my vote. Whack it in the oven and go for a good 3 hour walk. Come back, bung the rice on, bread in to warm and relax with a a few decent bottles.This is a good one from the curvy, pouting, buxom beauty!

Lamb tagine with some couscous
Lamb shanks (brown in the pan)
Throw in the oven for 3 hours with:
Tinned tomatoes
cumin
tumeric
paprika
saffrom
dried apricots
sultanas/raisins
honey
bit of stock
When done, remove the shanks (meat should be falling off the bone), stir through some freshly chopped flat leaf parsely and corriander.
Put a shank on a bed of couscous, ladle some sauce over, top with some flaked almonds.
Dig in.
