I made some earlier which, for a first time baker, was amazing.

however, it felt wrong having to put that much cooking oil into a recipe. is there an alternative?

The only alternative would be a dairy fat like butter which would make it richer (and heavier). Just use a good quality rapeseed oil, that's about the healthiest simple option really.

I did my first carrot cake a month or two ago - it's also got a lot of oil in the recipe but I'm not that bothered about it.

Anyway, I was just browsing for another recipe and spotted this Jamie Oliver carrot cake without the oil - so thought I'd find your thread and add the link smile
