I'm a fan of Spanish classical guitar - that finger picking playing is usually brilliant - however, I don't know what Composer or pieces to look out for - can PH recommend something that I'll like please?

I'd start with the guitarists, not the composers. Check out Andres Segovia - he played most of the good and the great last century and many composers wrote specifically for him.

If you want to go more flamenco then Paco de Lucía is ya man.
