Its is possible the pinion is a bit stiff/sticky and isn't returning to the housing when you relase the key, and is grinding against the starter ring gear on the flywheel. Might be time for a new starter soon.

I believe this is referred to most commonly as 'VAG squeal'
I have it as does my sister. Neither of us really care. The cure is removal of the starter and regreasing. Not much different in price from removal of the starter and replacement when you consider labour costs...
