Can anyone recommend a good way of cooking a chicken breast that's low in carbs and fat?
The OH is on a diet currently so I can't stuff it with vast quantities of cheese or anything, but I'm looking for some inspiration beyond simply sticking it in the oven. Maybe tomatos and peppers stuffed inside or something?

In the end I chopped up some mushrooms, courgettes, mixed peppers and cherry tomatos (basically the contents of the salad bin), mixed them with a bit of olive oil and Worcester sauce and stuffed the lot into the chicken breasts. Wrapped in tin foil and cooked in the oven. Worked a treat.

Literally just get the soup bubbling in a pan and add the chicken? Sounds straightforward.Yep. I keep a batch of the stock frozen, and then defrost it and sieve it. Add extra spring onion, chilli, lime juice, fish sauce to taste,and chuck in some prawns, squid or chicken. When done, pour over noodles in a bowl or pre-cooked rice (the noodles probably won't need any cooking, the soup you pour over will do that)
Off the top of my head the recipe for the stock is something like:
chicken stock
fish sauce
chilli
galangal paste
kaffir lime leaves
lemongrass
lime juice
palm sugar
and just adjust the ingredients as you cook it to suit your balance of hot, sweet and sour.
