Well it just is, isn't it?

No messing around keeping stuff cool before it goes on, plus the vodka is chilling nicely.

I'm giving serious thought to proposing to MC hehe

I've actually just started working on a big home-made driven smoking oven. If that was finished it'd be going now. I'll finally be able to do my half hog roast next year lick

Mmm... satay rabbit with dipping sauce:




Veniburgers were nicer than expected. Thanks to markreilly for the recipe - 2/3 minced roe deer, 1/3 minced fatty lamb, and some garlic.

I've topped it with Cambridge Chilli Farm blackberry and chilli jelly:

You buggers have been watching that TV advert where they eat special yoghurt or something then go out into the snow and have a BBQ.

Me, I'm staying off the special yoghurt.

Satay recipe:

Delicious this is - a zesty spice hit wrapped up with a lovely caramelly-licquoricey sweetness. Recipe from Rick Stein via smack with a little MC R&D.


Marinade:

1 tbs coriander seeds
1/2 tsp cumin seeds
1 tbs black peppercorns
25 grams garlic, crushed
3 Thai chillies, finely chopped
juice of a lime
2 tsp raw cane (or palm) sugar
1 tbs ketsap manis (Indonesian soy sauce)
1 tbs oil

Dry roast the spices, grind and combine with all the other ingredients. Cube 500g of meat (beef, pork and chicken all work well) and marinate in the above for 30 minutes, then thread onto bamboo skewers. BBQ until done to your liking.


Dipping sauce:

3 tbs ketsap manis
juice of 1/2 a lime
2 red Thai chillies, finely chopped
1/2 a banana shallot, finely chopped

Mix together and serve with the BBQed meat.

The dipping sauce also works very well with pineapple grilled on bamboo skewers. Heavenly, this is.

Heavenly it sounds. A recipe worth noting.

I did some panko king prawns tonight after dinner as I was still hungry after our walk in the snow.

It is a great recipe. yes

However you've given me an idea... (I love this forum cloud9)

Next I'm going to try big raw king prawns in the marinade, BBQing / chargrilling these with sliced fennel, and drizzling the dipping sauce over.

I wish we could have made more of that jelly - couldn't pick the blackberries fast enough. Thanks for posting that photo, it's always interesting to see how our products are used :-)
